This healthy fish recipe features cinnamon as an ingredient, something we usually only associate with gooey desserts! However, cinnamon has been used in main dishes for centuries for both its taste and health benefits. The essential oils in cinnamon bark contain active ingredients that have been shown to have an anti-inflammatory and anti-microbial effect. It also helps to regulate blood sugar by slowing the rate at which the stomach empties after a meal and stimulating insulin receptors.

Limes reach their peak from May through October and contain flavonoid antioxidants that help protect against cancer and have antibiotic properties. They are also an excellent source of vitamin C, another important antioxidant that neutralizes free radicals that damage the body's cells.

Any firm white fish can be used in this healthy fish recipe, such as tilapia or halibut. This is a relatively easy and tasty recipe with a bit of a tang to liven the taste buds.

Fish Veracruz

1/4 cup olive oil

1 chopped green pepper

3 cloves minced garlic

1/4 teaspoon white pepper

1 teaspoon ground cinnamon

1 juiced lime

1/4 cup drained jalapeƱos

3 chopped large tomatoes

4 8-oz fish fillets


  1. Preheat the oven to 350 degrees. Over medium high heat, heat the oil in a large skillet.
  2. Saute the green pepper, garlic, and onion about 5 minutes until soft. Add the white pepper, cinnamon, lime juice and chiles and blend for 2 minutes. Add the tomatoes and cook for 10 minutes or until thickened.
  3. Place the fish filets into a greased baking dish and top with the tomato sauce. Bake 15 minutes or until the fish flakes easily.
