The best healthy breakfast recipes combine a protein, fruit or vegetable, and whole grain to give the body the right balance of nutrients with which to start the day.
This tomato-ham breakfast melt provides all the required nutrients. Tomatoes are high in lycopene, the antioxidant that has been shown to protect against many types of cancer. And when cooked, the lycopene in tomatoes becomes more easily available for the body to use. Be sure to use ham that is organic and uncured, to avoid unhealthy nitrites used in the curing process. Cheese supplies protein and calcium, and you get B vitamins, vitamin E, magnesium, iron and fiber from multigrain bread.
This would also make an excellent lunch, served with soup or salad!
4 thin slices tomato
4 thin slices ham
2 slices cheddar cheese
2 thin slices multigrain bread
Toast the bread and top with ham, tomato, and cheese. Place in toaster oven or under a broiler until cheese melts.
