Smoothies may be the king of healthy breakfast recipes because they are quick and easy to make and are packed with lots of nutrients. Just one smoothie can provide most of your daily requirement of fruits and vegetables, depending on what you put in it.
This mango-blueberry smoothie also provides plenty of healthy amino acids, vitamins, minerals and antioxidants. Mangoes are high in vitamin C and iron, and the antioxidant beta carotene. Blueberries are considered a superfood because their antioxidant anthrocyanins have been found to help protect against infection, decrease aging in the brain and lower cholesterol levels.
Drinking a smoothie is a great way to start your day and to ensure you are getting the nutrients you need to keep yourself healthy. And they're so yummy that you may want one for a pick-me-up later in the day.
1 cup chopped mango, fresh or frozen
1 cup buttermilk, plain low fat yogurt, almond or rice milk
2 teaspoons mild honey such as clover
1 cup fresh or frozen blueberries
1 1/2 teaspoon freshly squeezed lime juice
6 raw almonds
2 ice cubes, if desired
Blend all ingredients in a blender until smooth.
