An excellent source of protein, fiber and folic acid, lentils make for some great cheap healthy recipes. They are relatively quick and easy to prepare, when compared to many other dried beans, and you can add many different ingredients to them for a wide variety of meals.

Because lentils are such a good source of fiber, they help to lower cholesterol. They are low in calories, at only 230 for a cup of cooked lentils, and they are also low on the glycemic index so eating them will not cause your blood sugar to spike. It makes a great lunch that will keep you satisfied all afternoon long.

There are quite a few varieties of lentils, but the green and brown ones tend to hold their shape better with cooking. Red and yellow ones are good for using in Indian dishes, such as daal, when you want more of a puree. This stew is especially tasty with the addition of barley and just a touch of sherry.

Lentil Stew with Barley and Mushrooms

Ingredients

1/4 cup olive oil

1 chopped onion (medium)

1 stalk chopped celery

2 chopped carrots

1 cup pearl barley

1 1/2 cups brown lentils (dry)

1 1/2 litres beef broth

1/4 teaspoon thyme (dried)

1 teaspoon parsley (dried)

1/4 teaspoon black pepper

1 bay leaf

4 cups sliced button mushrooms

1 tablespoon dry sherry

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook and stir until they are limp but not brown, around 5 minutes.
  3. Mix in the celery and carrots and cook for another 5 minutes.
  4. Stir in the barley and lentils so they are coated with oil and continue cooking until lightly toasted.
  5. Pour in the beef broth and season with thyme, parsely, pepper, and bay leaf.
  6. Bring to a boil.
  7. Cover and simmer for 25 minutes over low heat.
  8. Add button mushrooms and cover and cook for another 30 minutes, stirring occasionally.
  9. Optional: Mix in sherry during the last 5 minutes.
  10. Taste and season as needed before serving.
